Greetings, appeared community, I hope you are spending a day full of the best energies, I had days wanting to have a beef soup, my husband to please me went out very early to buy what he needed to prepare a delicious and comforting ossobuco soup, I invite you to accompany me to prepare it.
600 gm. de ossobuco
1 ½ de verduras variadas (yuca, ocumo, yame, auyama)
2 mazorcas de maíz
2 ajíes dulces
1 pimentón verde
1 tallo de puerro
1 tallo de apio
1 ramita de cilantro
3 dientes de ajo machacado
Sal y pimienta al gusto
Agua cantidad necesaria
600 gm. by ossobuco
1 ½ of assorted vegetables (yucca, squash, yame, pomkin)
2 ears of corn
2 sweet peppers
1 green bell pepper
1 leek stalk
1 stalk of celery
1 sprig of coriander
3 garlic cloves, crushed
Salt and pepper to taste
Water required quantity
🍝For this type of preparation, I usually like to marinate the meat, but today due to lack of time I could not do it, I added a little oregano and the crushed garlic, then I sautéed it on both sides with the achiote oil.
Then I added the water and let it cook for about 1 hour until the meat was tender.
While the meat was tenderizing, I cut the paprika, chili peppers, leek, celery and corn on the cob into chunks.
I sautéed the dressings with the achiote oil and added a little salt, then added them to the pot along with the corn on the cob.
The varied vegetables I cut into cubes, I do not like to cut them so big, rather the size of a bite so that my dear guests can better enjoy the soup, I added them to the pot, rectify the salt point and let it cook over medium heat until all the vegetables are tender.
